It’s a tradition. I can’t express why it matters. Just its memory. Maybe that my first stomach ache in my life was because i had a milk shake and french fries from there back 50+ years ago. It’s cherished for that as much as the shared memories from friends and family. I love it. My Texas and New York relatives seem to love it too.

Perhaps his desired audience demo are 18th century chemistry historians and foreign trained scientists and these were all nodding along and hooting when he did this.
